Why does Méliès say this? Melies does not want Hugo to end up having the same issues he had as a kid by believing that things in movies happen in real life. He wants Hugo to know the truth, which is that fairy tails don't happen in real life, but only in stories. He is worried that Hugo will never know this, so he just tells him early on.

Why does he want to forget about the films he made?

He wanted to forget about the creativity and magical Wonderland type of Worlds he always imagined. He stopped believing in his dreams and creative side.  the films he made almost always consisted of this creativity, which really made Georges Méliès want to forget about these films, until Hugo came along.

Do you think the film Hugo has a happy ending? Why or why not?

Yes, i think Hugo ended very happy. It is ironic because it had a happy ending itself, while suggesting earlier that happy endings don't exist. In the end Hugo got a much better and more Humane life rather than living in a train station, he finally was offered the opportunity to pursue his dreams, and that's exactly what he did. Georges Méliès also was reconnected with his past film life due to Hugo's creative mind and presence.
